2 Week Potato Challenge: Day 8
Well here I am, 8 days into the challenge. So how am I doing? Pretty good. I have to confess that I went into the challenge with a bit of dread. I expected that I would make it through the challenge by sheer grit and that when I was done I would never want to see another potato again. But I am surprised to find that I still don't mind eating potatoes. Do I look forward to eating something else? Yes, of course, but I could actually see myself incorporating more potatoes into my diet after this is over.
The great part about eating this way, is that I am never really hungry. According to SELFNutrition Data, one large potato has 278 calories. It would take over 7 potatoes to reach 2000 calories for the day. With potatoes being so filling, I don't think I could eat more than that if I tried. And yet, unlike other lower calorie diets I've been on, my energy level is up and I do not find myself tempted to eat more.
As far as my weight, it is heading in the right direction. I was expecting to loss 1/2 or 1/3 pounds per day, but so far I have exceeded my expectations. Part of it may be because it is a shock to my system, and it may slow down as my body adjusts. Another part could be normal fluctuations. I'll be interested to see what it does over the next week.

Hi Iris I recently came across your blog and comments you made about wanting to lose weight. Congrats on what you have accomplished so far! I know as we get older it becomes harder to get rid of those excess pounds. I would encourage you to read a book called The Complete Guide to Fasting by Dr. Jason Fung. He is an endocrinologist that specializes in the treatment of diabetes. The book is well written and explains metabolism and what happens in our bodies when we eat in terms anyone can understand. He writes about fasting and intermittent fasting and dispells the myths around it. It has changed how my husband and I eat and view food and food choices.
