2 Week Potato Challenge: Day 4 (Fringe Benefits)
So the potato challenge is going better than I thought it would. I really expected to never want to see another potato again at this point, but I still don't mind eating them. Better still, does not restrict the volume of potatoes I eat, so I am not feeling hungry. I've also realized that there are a couple fringe benefits of eating this way.
1) I save time. Typically before I go grocery shopping, I carefully plan out my meals for the week, spend time wandering through grocery stores trying to find all the ingredients I need, and spend time dicing and measuring out ingredients for various recipes. Eating a diet of potatoes for two weeks means that shopping is quick and easy. I didn't even have to make a shopping list last week. As for cooking, the most prep I ever have to do is cutting potatoes and preheating the oven.
2) I save money. Even though I bought so many potatoes the cashier asked me what I was making with all those potatoes, my grocery bill was noticeably smaller this past week.
These fringe benefits are by no means a reason to try this way of eating, but they do make a nice bonus.
