2 Week Potato Challenge: Day 2

  It's day 2 of my 2 Week Potato Challenge, so how am I doing?  Pretty good over all.  I thought that by this point I would hate the site of a potato, but it is not that bad.  Here's a breakdown of what I've eaten so far.

Day 1 Breakfast
Day 1: Breakfast- Shredded potatoes fried with no oil in a non stick pan.  I wanted to start with something special, and the browning added a little natural flavor.
Day 1: Lunch- Russet potatoes steamed in a pressure cooker.  I'm finding that my Instant Pot, is a great tool for making an easy meal.
Day 1: Dinner- More russet potatoes steamed in my Instant Pot.  I'm starting to realize that I did not buy enough potatoes.  My husband is joining me on this challenge (it's actually his second time doing this).  Plus I want to try a little more variety than russet potatoes.  Guess I'm going to Sam's tomorrow.
Day 2: Leftover steamed russet potatoes.  I worried that it wouldn't taste as good coming from the refrigerator, but it's not bad.  I thought I would hate it without added flavorings, but it's not too bad so far.
Day 2: Lunch- I've made it to Sam's now so I now have baby potatoes.  I decided to boil up a batch.  It's interesting how without the seasonings I can pick up the subtle differences between types of potatoes.  The russets I had yes
terday were slightly sweeter.
After a trip to the store
Day 3: Dinner- Ok I haven't had it yet, but I'm looking forward to chopping up some red potatoes and baking them in the oven.  I'm hoping to brown the potatoes a little to add a little different flavor.

It's too early to know if this is making a big difference in my weight or health, but I feel good.  I'm not hungry at all and I'm pretty energetic.  I'll keep you updated as the experiment continues.
